A little over 18 months ago, our distiller Trev quietly filled an old whisky barrel with Coffee Liqueur and tucked it away in the brewery. No grand plans, no fanfare — just curiosity and a hunch that something special might happen with time.
Turns out, he was right.
Over 18 months, the barrel transformed our rich Coffee Liqueur into something deeper, smoother and more complex. The whisky-soaked oak slowly imparted layers of vanilla, toasted oak, caramel and gentle spice, while preserving the bold espresso character at its heart.
The result is a luxurious coffee liqueur with rich espresso and dark chocolate notes that unfold into a long, warming finish with subtle whisky warmth and depth. Smooth, indulgent and wonderfully balanced, it's a coffee lover's dream with a distinctly Last St twist.
Shake it into an elevated Espresso Martini, pour it over ice for an after-dinner treat, or simply savour the craftsmanship that only time in barrel can create.
