It's spring water drawn from a hand-built red brick well beneath our historic brewery on Last Street in Beechworth. The well has been in continuous use since 1872 and taps the same underground source that has shaped everything we've ever made here. Bottled on site. Minimally handled. Just the water, as it comes.

It starts high above Beechworth. Rain and snowmelt from the granite massif of Mount Buffalo filter slowly downward through ancient stone, picking up a naturally balanced mineral profile along the way. By the time that water reaches our well, it has been moving through the earth for a very long time. We draw it from the same underground source the brewery has relied on since 1872 and bottle it right here in Beechworth.

The well was sunk by hand in the early 1870s, deep beneath the brewery. It is perfectly circular, lined with red brick, and carries the hallmarks of the gold rush era and the skilled craftsmanship associated with the Chinese miners who helped shape this region. More than 150 years on, it still operates. Still drawing from the same source.

For generations this water has been the foundation of every drink we make on site. Releasing it on its own felt like the most honest thing we could do. It is the purest expression of what Last St is built on — alpine spring water, filtered through ancient Beechworth granite, drawn from a well that has been here since 1872.

The water does most of the work itself. Filtering slowly through layers of granite over many years naturally purifies it before it reaches the well. On our end, we use modern filtration processes designed to preserve the natural character, purity and mineral profile of the water while meeting Australian food safety standards. No heavy processing. No artificial refinement.

Provenance, history and continuity. This water comes from a single named historic source beneath one of Australia's oldest continuously operating brewery sites. It has been drawn from the same underground aquifer since 1872, filtered through ancient Beechworth granite, and bottled with minimal intervention. Few products can trace their water this directly to one place and one story.

Granite is a dense, ancient rock that slowly purifies water as it passes through. Over long periods, this natural process strips out impurities and imparts a clean, balanced mineral character. By the time our water reaches the well, granite has already done the filtration work. That is why it tastes the way it does.

Tap water is typically treated with chlorine and fluoride to make it safe for distribution at scale. Our water needs none of that. It arrives at the well naturally filtered and is bottled with minimal intervention, so what you taste is the water itself, not the treatment.

Purified water is usually processed tap water that has had everything removed, including beneficial minerals, through reverse osmosis or similar treatment. Our well spring water retains the naturally occurring minerals it picks up filtering through granite. Nothing added, nothing stripped out.

No. It is offered as still spring water, so the natural character and crispness of the water comes through clearly. If you enjoy it with a little sparkle, it pairs beautifully with our range of cordials and sodas.

Water drawn from this brewery site was awarded First Prize at the International Victorian Exhibition in 1875. At a time when water quality was genuinely tested, judged and publicly recognised, that honour confirmed what the site had already been quietly proving since 1872. More than 150 years later, the same spring source still flows beneath the brewery.
